Cake is the focal point of every major celebration, whether it is for a birthday, a holiday, a wedding, a reunion, or just a Friday night. Here is the process to veganize your cake recipe and get your oven mitts out and bring out your inner Amit Sinha. Vegan-friendly sweets are more popular nowadays. The movement, which was only a seedling a few years ago, has blossomed into a full-fledged macro trend and is sweeping the baking industry and the wider world.
It begs the question: how big can the industry go if the number of vegans in India keeps rising and more customers embrace plant-based products for ethical and environmental reasons? And what opportunities are still available in the sweet bakery? On the other hand, consumers now have much higher expectations and will not accept a drop in quality compared to the standard.
By 2024, it is expected that the vegan food business would be worth $24 billion. As vegan goods are included year-round into ranges, there is enormous opportunity for growth in the sweet and savoury sector. So, consider alternatives to Veganism.
The end goal of both traditional cake and vegan cake is the same: to bake a sweet batter that rises via trapped CO2 (carbon dioxide) and steam bubbles before setting and cooling in place, resulting in a light and airy crumb.
Below is a list of some easy-to-find vegan cake mixes. But that's only half of the story. What about the eggs and butter that the recipe calls for? Those aren't vegan at all!
Fear not, there are egg and dairy substitutes that produce the same light and fluffy cakes you know and love.
1. INSTEAD OF BUTTER USE REFINED COCONUT OIL IN THE RECIPE
Two types of coconut oil are available. Virgin and refined. Virgin is unfiltered and can be useful in some recipes, but we hardly ever use it because to the overpowering coconut flavour it gives out. On the other hand, refined is fantastic since it complements both savoury and sweet foods without overpowering the flavour.It is great to use with everything from roasted vegetables to chocolate chip cookies and has a high smoke point.
MEASUREMENT ADVICE:
If a recipe calls for 1/4 cup melted coconut oil, it means to melt the oil first, then measure out 1/4 cup. If it says 1/4 cup melted coconut oil, it means to measure 1/4 cup and then melt it. This may appear to be a minor distinction, but it will result in different amounts and affect the outcome of the recipe. For melted or liquid fats, use a liquid measuring cup.
2. INSTEAD OF EGGS USE FLAX EGG,APPLESAUCE PLUS CORNSTARCH AND SODA AS ALTERNATIVES
EGGFLAX
This is fantastic because it can be used to make everything from cookies to cakes to pancakes and muffins. This trick is used in my vegan Triple Chocolate Cake and (my personal favourite!) Pumpkin Bread recipes. Simply combine 1 tbsp ground flax seed and 2 tbsp. water in a small bowl to make a flax egg. Set aside for 15 minutes to gel after stirring. This is equivalent to one egg.
APPLESUCE + CORNSTARCH, UNSWEETEEND
Pectin, a natural food thickener found in apples, thickens dishes like jams, jellies, and applesauce. Because of this, it also functions effectively as an egg substitute. It seems to work best when mixed with corn starch, in my opinion. When a recipe calls for 2 eggs, I use 1/4 cup applesauce and stir 1 tbsp. of corn starch into the wet components to dissolve it—not literally combined; we don't mix them together separately. Then proceed to add the dry ingredients as usual. For cakes, combining these two is quite effective.
SODA
You could also use a Coke can! Although it seems absurd, it actually works! This cake, which I made with a can of Sprite, was fantastic. With no eggs or oil, it's light and fluffy! Crazy.
